Hi there! Sorry for the delay! I am obsessed with the way you painted those clouds, just want to put that out there first, they are brilliant. About the material: I think it would be best to try and block in the lighting first, and then define the material where needed afterwards, so I went and did that very roughly. For materials I would recommend making a little study like the one I did up there. When you look up a reference, try to pinpoint what exactly it is that makes a material recognisable. Here I didn't look up a specific reference but I just thought horses tend to be quite smooth and even slightly shiny, depending on the type. so I made sure to build up the gradients slowly like this.
