Doing so helps define the organic forms and flow of the hairstyle. Right now, keeping it at a single value makes it feel somewhat flat, whereas adding shadows helps communicate the changes in form between the different planes. :) I'd recommend looking at references from anime renders or more stylized portraits and studying how artists suggest volume in hair. As for your second question, I couldn't confidently tell you whether your work is industry-ready as an illustrator, simply because there are so many different styles and roles within the industry. What I would recommend is identifying the studios you'd most like to work for and studying how they approach design, painting, and visual development. Adapting your studies toward those goals will help bring you closer to the type of work and level you're aiming for.
